Stone Fruit Salad with Lemon Maple Thyme Dressing
Ingredients
- 4-6 cups sliced stone fruit of choice (cherries, peaches, plums, apricots, nectarines, etc)
- 2 cups blueberries
- 2 cups blackberries
- 2 tbsp lemon juice
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- Pinch of salt
- 1 tsp fresh thyme, finely chopped
Preparation
Add all fruit to a large bowl.
In a separate small bowl, whisk together the lemon juice, maple syrup, vanilla, cinnamon, salt and thyme until well combined.
Pour dressing over fruit and toss gently to coat.
Enjoy right away or chill for 1 hour in the refrigerator before enjoying.
