Strawberry Jam

Ingredients

  • 100g golden caster sugar
  • 1/2 lime, juice only
  • 1 tsp vanilla extract
  • 1 tsp cornflour

Preparation

  1. Place strawberries in a pan and mash with a fork, add sugar, vanilla extract and lime juice

  2. Bring to the boil then simmer on low heat for 10 minutes then add cornflour and stir quickly

  3. Simmer for 5 more minutes, take off the heat and transfer into a sterilised jar
