Super Speedy Fajita Flavored Wraps

Ingredients

  • Pack of mushrooms
  • 2 red peppers
  • 1 red onion
  • 8 small tortillas
  • 2-3 tbsp fajita spice mix

Sauce

  • 3 tbsp vegan mayo
  • 1 tsp fajita mix
  • Squeeze of 1/2 lime

Preparation

  1. Slice the vegetables and add them to a hot frying pan with a glug of olive oil.

  2. Fry for around 2 minutes before adding the spice mix; meanwhile, mix the mayo together.

  3. Toast the wraps over an open flame and mould them into the taco shape.

  4. Serve with fresh lime wedges and chopped chillies.
