Super Speedy Spinach Flatbread

Ingredients

  • 230 ml gluten free flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 120 ml lukewarm water
  • 120 ml spinach (defrosted frozen leafy spinach)
  • Oil for frying (can be garlic infused)

Preparation

  1. Add flour, salt and baking powder to a bowl and mix.

  2. Add water and spinach and mix into a smooth dough. Add more flour if too sticky or more water if too loose. The dough should be easy to handle.

Shaping and frying

  1. Divide the dough into 5 equal parts.

  2. On a flour-covered surface, roll each dough ball into rounds about 15 cm in diameter or shape with hands.

  3. Preheat a pan with oil and fry each bread for about 2 minutes on each side over medium heat.

  4. The bread should be crispy on the outside with a bit of bounce when pressed.

  5. Serve warm.
