Vegan Zucchini and Spinach Loaf

Ingredients

  • 1/2 cup chia seeds
  • 1.5 cups water
  • 1 zucchini
  • 1 cup spinach
  • 1/2 cup olive oil
  • 1/2 cup almond milk
  • 2 cups gluten-free flour
  • 1 teaspoon baking powder
  • salt

Preparation

  1. Preheat oven to 180C degrees

  2. Soak the chia seeds in the water for 5-10 minutes to form chia gel

  3. Add the chia gel to a mixing bowl, then add grated zucchini, chopped spinach, olive oil and almond milk

  4. Mix well, then add in the flour, baking powder and salt to taste

  5. Combine mixture well, then transfer to a lined bread tin

  6. Optionally top with seeds for added crunch before baking in the oven for 40-45 minutes until golden and cooked through
