Creamy Nut Butter Oatmeal Chia Porridge

Ingredients

  • 1 cup oatmeal
  • 1/4 cup chia seeds
  • 1/4 cup quinoa
  • 1 1/3 cup water
  • 1 1/2 cups almond or cashew milk
  • 2 tsp cashew or almond butter or one of each
  • 2 tbsp maple syrup (optional)
  • 1/2 tsp salt

Preparation

  1. In a medium saucepan, bring 1 1/3 cup of water to boil and add salt.

  2. Reduce heat and add oatmeal, chia seeds, and quinoa.

  3. Cook for 10 minutes, stirring occasionally.

  4. Add almond milk.

  5. Cook for another 4 minutes.

  6. Stir in the nut butter and maple syrup.

  7. Simmer until desired consistency is reached.

  8. Remove from heat and cover.

  9. Let it stand for 2 minutes before serving.

  10. Top with seasonal fruits and enjoy.

Tips

  1. Enhance the porridge with toppings like persimmons, pomegranate, dragon fruit, and cacao nibs for added flavor and texture.
