Sweet Potato and Parsnip Spaghetti

Ingredients

  • 1 spiralised sweet potato
  • 1 spiralised parsnip
  • 1 tablespoon polenta
  • 1 tablespoon olive oil
  • 1-2 teaspoons salt
  • 2-3 teaspoons pepper
  • 1 tablespoon agave

Spinach ricotta

  • 2 cups spinach
  • 1/3 cup cashews soaked in kettle boiled water for 30 minutes
  • 1 tablespoon nutritional yeast
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons smoked salt

Preparation

  1. Mix all the ingredients together and roast in a preheated oven at 200°C until done

Spinach ricotta blend

  1. Blend all ingredients together and enjoy
