Sweet Potato Chocolate Cake with Chocolate Pudding and Strawberries

Ingredients

  • 1 block organic silken tofu
  • 1/4 cup cocoa powder
  • 1/4 cup real maple syrup
  • 1/4 cup coconut oil
  • 2 tsp vanilla extract
  • 1/2 tsp blackstrap molasses

Preparation

  1. Blend all ingredients until smooth. Chill in the refrigerator until firmer. I poured this over our chocolate cake, but it was also great on its own

  2. A few notes

  3. You don’t have to add the coconut oil, but I found that the chilling of the coconut oil is what made it firmer and creamier. Use filtered coconut oil if you don’t want any coconut taste. The blackstrap molasses is also optional, but I think it removes the last bit of tofu flavor! So good with berries
