Tacos

Ingredients

  • 2 tsp cumin
  • 1 tsp salt
  • 2 tsp apple cider vinegar
  • 1/2 tsp brown sugar
  • 3 tomatoes, chopped
  • 2 spring onions, chopped
  • generous handful of chopped coriander
  • 50ml pineapple juice
  • all chillies from @spicemountainuk - my fave shop!

Preparation

  1. Soak dried chillies in hot water for half an hour. Add chillies to blender (saving the water) with all other ingredients. Whizz everything until combined and thin it out using more pineapple juice or the chilli water depending on your taste
