These Are Raw Vegan Strawberry and Chocolate Cheesecakes
Ingredients
- 1/3 cup raw cashews soaked overnight
- 1/2 cup coconut meat
- 1 cup strawberries
- 1/4 cup non dairy milk
- juice from a lime
- 2-3 tbsp agave nectar or maple syrup
- 1/8 cup beetroot (optional)
- 1/4 cup almonds
- 1/2 cup oats
- 1 cup prunes
- 2 tbsp cacao powder
Preparation
In a food processor grind up the almonds, oats and cacao powder
Add prunes and blend until it forms into a dough
Spread dough in a lined cake mold and leave it on the freezer for 15 minutes
Blend together the rest of the ingredients until smooth
Take the base out of the freezer and pour mixture on top
Put it on the freezer for about 6 hours and let it chill at room temperature for 15 minutes before eating
Optional) drizzle melted chocolate and sprinkle some crushed freeze-dried strawberries on top
