Sprouted Red Lentil Protein Balls
Ingredients
- 2 cups red lentils
- 1 cup almond flour
- Himalayan Salt
- 1/2 mashed avocado
- 1 medium onion, finely chopped
- 1 tablespoon tomato purée
- 2 tablespoons puréed roasted hot and sweet red peppers
- 1 teaspoon cumin
- Juice of a lemon
- 1/2 teaspoon crushed red pepper
- Black pepper to taste
- 1/2 cup scallions, finely chopped
- 1 cup finely chopped fresh parsley
- Romaine or other small cupped lettuce leaves / cucumber, tomato, onion slices
Preparation
Sprout lentils, ensuring they retain some consistency to form balls easily.
Add almond flour and spices, stir well, and set aside.
Mix onion and mashed avocado, then add to lentils along with other ingredients and stir well.
Form mixture into bite-sized balls using a small scoop.
Serve chilled, wrapped in lettuce leaves or with cucumber, tomato, and onion slices.
