Ingredients

  • 2 cups red #lentils (http://healyeatsreal.com/how-to-sprout-red-lentils/
  • 1 cup almond flour
  • Himalayan Salt
  • 1/2 mashed avocado
  • 1 medium onion, finely chopped
  • 1 tablespoon tomato purée ?2 tablespoons puréed roasted hot and sweet red peppers
  • 1 teaspoon cumin
  • Juice of a lemon
  • 1/2 teaspoon crushed red pepper ?Black pepper to taste
  • 1/2 cup scallions, finely chopped
  • 1 cup finely chopped fresh parsley
  • Romaine or other small cupped lettuce leaves / cucumber, tomato, onion slices

Preparation

  1. Sprout lentils (You want the lentils to still have some consistency— too mushy, and they’ll be hard to form into balls.)

  2. Add almond flour and spices. Stir everything together well, then set aside. This is easier said than done— the lentils will turn into a super thick, sticky mixture

  3. Mix the onion and avocado mash - add this to the lentils. Also, add the other ingredients and stir well

  4. Take a small scoop of the lentils and form into bite-sized balls

  5. Serve chilled, wrapped in lettuce leaves or between cucumber, tomato and onion
