Vegan Asparagus, Pea, and Pesto Rightrice Risotto

Ingredients

  • 2 cups water
  • 1 head of asparagus, chopped
  • 1 1/2 cups fresh peas
  • 1-2 tbsp olive oil
  • Salt to taste
  • Fresh lemon juice (about 1 tbsp)
  • 1 package RightRice Creamy Parmesan Style risotto
  • 1/4 cup store-bought or homemade vegan pesto

Preparation

  1. Bring 2 cups of water to a boil.

  2. In a separate pan, sauté the chopped asparagus and fresh peas in 1-2 tbsp of olive oil. Season with salt to taste.

  3. Once the asparagus and peas are tender, add a squeeze of fresh lemon juice (approximately 1 tbsp).

  4. Add the RightRice Creamy Parmesan Style risotto to the boiling water. Reduce the heat to a gentle boil and cook for 5 minutes, stirring occasionally.

  5. Remove the risotto from heat, cover, and let it sit for another 7 minutes.

  6. After the resting time, stir in 1/4 cup of store-bought or homemade vegan pesto, along with the sautéed asparagus and peas.

  7. Serve the vegan asparagus, pea, and pesto risotto immediately and enjoy!
