Vegan Carrot Smoked Salmon

Ingredients

  • 1 large carrot
  • 1 tablespoon vegan fish sauce (I use @thaitasteuk)
  • 1 tablespoon liquid smoke
  • 1/2 lemon

Marinade

  • 4 tablespoons olive oil
  • 1 tablespoon liquid smoke
  • 1/2 tablespoon vegan fish sauce
  • 1/2 tablespoon caper brine
  • Juice of 1/2 lemon

Preparation

  1. Use a mandolin to slice the carrot into ribbons about 3mm thick or use a peeler if preferred.

  2. Put the ribbons into a small pot and cover with 400ml of boiling water.

  3. Add the liquid smoke, vegan fish sauce, and squeeze in the 1/2 lemon, including the lemon for extra flavor.

  4. Boil for 10 minutes.

  5. Drain the carrot and pat dry.

  6. Mix the marinade ingredients in a shallow bowl or plastic container.

  7. Add the carrot to the marinade and mix to fully cover.

  8. Refrigerate for at least a couple of hours or ideally overnight.

  9. Use a fork or slotted spoon to remove the salmon from the marinade and serve with a squeeze of lemon.
