Vegan Cauliflower Rice Patties

Ingredients

  • 2 dl basmati rice
  • 4 dl water
  • 1 tsp salt
  • 1 large cauliflower (approx. 700 g), chopped small
  • 2 dl rolled oats
  • approx. 1 tbsp vegetable bouillon powder
  • 1-2 tsp ground ginger (or a little fresh grated ginger)
  • 1-2 tsp ground nutmeg
  • a little pepper and salt, to taste

Preparation

  1. Cook the rice in water and salt, then let it steam off any excess liquid when done.

  2. Cook the cauliflower until just tender, then drain the water.

  3. Place the cooked rice, cooked cauliflower pieces, rolled oats, bouillon powder, and spices in a large mixing bowl and mash with a hand blender until fairly smooth, then taste and adjust seasoning with bouillon, ginger, nutmeg, pepper, and salt.

  4. Form into patties and fry in oil until golden brown and crispy on both sides.

Notes

  1. This recipe yields approximately 30-35 patties and is a vegan alternative to traditional Norwegian meatballs, often enjoyed during Christmas celebrations.
