Homemade Vegan Cauliflower Mash Pierogi

Ingredients

Dough

  • 3 cups flour
  • 3/4 cup warm water
  • 1 1/2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/8 teaspoon turmeric (optional)

Filling

  • 1 large head of cauliflower chopped into florets
  • 2 tablespoons melted butter
  • 2 garlic cloves minced
  • 2 green onions finely chopped
  • 1/4 cup non-dairy sour cream
  • 2 tablespoons nutritional yeast
  • salt and pepper to taste

Preparation

  1. Using a food processor combine the flour, salt, turmeric and slowly add oil and water, after a minute or so it will form a ball and wrap in a kitchen towel, rest dough for half an hour

  2. Steam cauliflower florets for 25-30 minutes until very tender, after steaming let cool and dry with kitchen towel

  3. In a food processor purée cauliflower with the rest of the ingredients and season to taste

  4. To make the pierogi slice dough in thirds, wrap other two-thirds with plastic wrap and sprinkle flour on work surface

  5. Roll out dough thin enough so you can see the shadow of your hand underneath

  6. Using a circular 3-inch cutter or narrow glass press cutter into dough to make wrappers and place 1 tablespoon of filling on each circle

  7. Lightly dampen edges of half the wrapper with water, fold in a half moon and seal by pressing with fingertips

  8. Place on parchment paper dusted with flour, cover with damp towel and repeat using the rest of dough

  9. Using a nonstick pan cook in batches with desired amount of butter on medium heat for 3-4 minutes on each side or until crisp
