Vegan Cheesecake Stuffed Sweet Potato Brownies
Ingredients
- - 1 cup sweet potato puree
- - 1/3 cup nut butter
- - 1/4 cup dates or dried fruit soaked in 1 tbs hot water, mashed
- - 1 tbs coconut oil
- - 1 tsp vanilla
- - 1/3 cup + 1 tbs cocoa powder
- - 1/4 cup coconut flour
- - 1 tbs ground flax
- - 1/2 tsp baking powder
- FOR THE CHEESECAKE FILLING: 1/4 cup cashew or coconut yogurt/soy cream + 1 tbs peanut butter + 1 tsp lemon juice + 1 tbs coconut flour
Preparation
Blend all brownie ingredients together and dollop half of the batter into a parchment-lined 1 lb loaf tin
Top with cheesecake mix and then the rest of the brownie batter
Bake at 180 degrees Celsius for 30-35 minutes, until the centre is set when lightly pressed
Let cool completely before slicing
Best served chilled
