Vegan Cheesecake Stuffed Sweet Potato Brownies

Ingredients

  • - 1 cup sweet potato puree
  • - 1/3 cup nut butter
  • - 1/4 cup dates or dried fruit soaked in 1 tbs hot water, mashed
  • - 1 tbs coconut oil
  • - 1 tsp vanilla
  • - 1/3 cup + 1 tbs cocoa powder
  • - 1/4 cup coconut flour
  • - 1 tbs ground flax
  • - 1/2 tsp baking powder
  • FOR THE CHEESECAKE FILLING: 1/4 cup cashew or coconut yogurt/soy cream + 1 tbs peanut butter + 1 tsp lemon juice + 1 tbs coconut flour

Preparation

  1. Blend all brownie ingredients together and dollop half of the batter into a parchment-lined 1 lb loaf tin

  2. Top with cheesecake mix and then the rest of the brownie batter

  3. Bake at 180 degrees Celsius for 30-35 minutes, until the centre is set when lightly pressed

  4. Let cool completely before slicing

  5. Best served chilled
