Vegan Chickpea and Spinach Madras

Ingredients

  • Leftover chickpeas
  • Red onion
  • Garlic
  • Spinach
  • Vegan chicken pieces
  • Madras paste
  • Chopped tomatoes
  • Crème fraiche
  • Fresh coriander
  • Paprika

Preparation

  1. Cook brown rice according to package instructions.

  2. Sauté red onion and garlic in a pan until softened.

  3. Add Madras paste and cook for 1-2 minutes to release flavors.

  4. Stir in chickpeas, vegan chicken pieces, chopped tomatoes, and spinach.

  5. Simmer for 10-15 minutes until vegetables are tender and flavors combine.

  6. Serve over brown rice, topped with crème fraiche, fresh coriander, and paprika.

Notes
