Vegan Chickpea and Spinach Madras
Ingredients
- Leftover chickpeas
- Red onion
- Garlic
- Spinach
- Vegan chicken pieces
- Madras paste
- Chopped tomatoes
- Crème fraiche
- Fresh coriander
- Paprika
Preparation
Cook brown rice according to package instructions.
Sauté red onion and garlic in a pan until softened.
Add Madras paste and cook for 1-2 minutes to release flavors.
Stir in chickpeas, vegan chicken pieces, chopped tomatoes, and spinach.
Simmer for 10-15 minutes until vegetables are tender and flavors combine.
Serve over brown rice, topped with crème fraiche, fresh coriander, and paprika.
Notes
Use leftover chickpeas for convenience and to reduce waste.
