Vegan Chickpea and Vegetable Stir-Fry

Ingredients

  • 1 cup chickpeas, cooked
  • 1 cup mixed vegetables (such as bell peppers, broccoli, carrots)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving
  • Fresh cilantro, for garnish

Preparation

  1. Heat sesame oil in a skillet over medium heat.

  2. Add minced garlic and ground ginger; sauté until fragrant.

  3. Add mixed vegetables and cook until slightly softened.

  4. Stir in cooked chickpeas, soy sauce, maple syrup, red pepper flakes, salt, and pepper.

  5. Cook until everything is heated through and well combined.

  6. Serve over cooked rice or noodles and garnish with fresh cilantro.
