Vegan Date-Sweetened Buckwheat Cookies

Ingredients

Dry

  • 160 gr buckwheat flour
  • 40 gr tapioca flour
  • 1 tsp baking powder

Wet

  • 1 tbsp flax seeds + 2.5 tbsp water
  • 1 tbsp coconut oil
  • 3 medjool dates soaked in hot water for 20 minutes

For topping

  • Chocolate for melting
  • A little coconut oil

Preparation

  1. Mix the flours and baking powder in a bowl.

  2. Let the flax seeds soak in water for 10 minutes, then add to the bowl.

  3. Add coconut oil to the mixture. If more liquid is needed, add a bit of plant-based milk.

  4. Mash the soaked dates with a fork or process them, then add to the bowl.

  5. The dough should be malleable.

Baking

  1. Form the cookies and place them on a baking tray.

  2. Bake at 185C for 20 minutes.

Chocolate topping

  1. Melt chocolate with a little coconut oil to make it liquid.

  2. Dip half of each cookie into the melted chocolate.

  3. Let them cool in the fridge to solidify the chocolate.
