Vegan Date-Sweetened Buckwheat Cookies
Ingredients
Dry
- 160 gr buckwheat flour
- 40 gr tapioca flour
- 1 tsp baking powder
Wet
- 1 tbsp flax seeds + 2.5 tbsp water
- 1 tbsp coconut oil
- 3 medjool dates soaked in hot water for 20 minutes
For topping
- Chocolate for melting
- A little coconut oil
Preparation
Mix the flours and baking powder in a bowl.
Let the flax seeds soak in water for 10 minutes, then add to the bowl.
Add coconut oil to the mixture. If more liquid is needed, add a bit of plant-based milk.
Mash the soaked dates with a fork or process them, then add to the bowl.
The dough should be malleable.
Baking
Form the cookies and place them on a baking tray.
Bake at 185C for 20 minutes.
Chocolate topping
Melt chocolate with a little coconut oil to make it liquid.
Dip half of each cookie into the melted chocolate.
Let them cool in the fridge to solidify the chocolate.
