Vegan Eats

Ingredients

  • 2 cans coconut milk (full fat) ⁠⠀
  • 3/4 cup unsweetened almond milk⁠⠀
  • 1/4 tsp ground ginger⁠⠀
  • 1/8 tsp ground turmeric ⁠⠀
  • 41/2 tsp ground nutmeg⁠⠀
  • 4 tbsp granulated sugar + 1 tsp⁠⠀
  • 1 pint Banana Nicecream⁠⠀
  • For garnish: cinnamon stick, star anise, ground nutmeg⁠

Preparation

  1. Place coconut milk in blender and pulse until fully combined. ⁠⠀

  2. Pour coconut milk in medium saucepan and add in sugar. Bring to medium heat, stirring fairly constantly until sugar dissolves - whisk together as it combines and sugar dissolves.⁠⠀

  3. Turn down heat to med-low and add remaining ingredients. Whisk until fully combined. Let sit on med-low heat for 5 minutes.⁠⠀

  4. Pour into into glasses, and top with a scoop (or two) of Banana Nicecream.⁠⠀

  5. Garnish with cinnamon stick, star anise or more ground nutmeg. Enjoy!⁠⠀
