Vegan Pie
Ingredients
- 1 cup of pitted medjool dates
- 1/2 cup cashews
- 1/2 pumpkin seeds
- 1/4 tsp sea salt
- 1tsp vanilla extract
- 2 purple sweet potatoes
- 1/3 cup coconut cream
- 1/4 cup maple syrup
- 1tbsp cbd oil
- 1 tbsp grated ginger
- 1tsp cinnamon powder
- 1tsp vanilla extract
- 1/4 tsp sea salt
Preparation
Peel and dice purple sweet potatoes and steam for 10-15 minutes until soft
In the meantime, I’m a food processor ass your dates, nuts, seeds, salt and vanilla extract and pulse 5-8 time until left with a doughy consistency
Transfer “dough” on to a pie tray and press down and around until your surface is completely covered. Set aside in fridge
Once the sweet potatoes are cooked, transfer into a high speed blender and add coconut cream, maple syrup, vanilla extract, CBD oil, ginger, cinnamon & sea salt.Blend everything until smooth
Pour filling in the pie tray and spread out evenly
Let your pie chill for 2-3 hours, serve & enjoy
Keeps in fridge for 7 days
