Vegan Pie

Ingredients

  • 1 cup of pitted medjool dates
  • 1/2 cup cashews
  • 1/2 pumpkin seeds
  • 1/4 tsp sea salt
  • 1tsp vanilla extract
  • 2 purple sweet potatoes
  • 1/3 cup coconut cream
  • 1/4 cup maple syrup
  • 1tbsp cbd oil
  • 1 tbsp grated ginger
  • 1tsp cinnamon powder
  • 1tsp vanilla extract
  • 1/4 tsp sea salt

Preparation

  1. Peel and dice purple sweet potatoes and steam for 10-15 minutes until soft

  2. In the meantime, I’m a food processor ass your dates, nuts, seeds, salt and vanilla extract and pulse 5-8 time until left with a doughy consistency

  3. Transfer “dough” on to a pie tray and press down and around until your surface is completely covered. Set aside in fridge

  4. Once the sweet potatoes are cooked, transfer into a high speed blender and add coconut cream, maple syrup, vanilla extract, CBD oil, ginger, cinnamon & sea salt.Blend everything until smooth

  5. Pour filling in the pie tray and spread out evenly

  6. Let your pie chill for 2-3 hours, serve & enjoy

  7. Keeps in fridge for 7 days
