Vegan Rainbow Sushi Rolls

Ingredients

  • 2 nori seaweed sheets
  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Assorted vegetables (carrots, cucumber, avocado, bell peppers, etc.)

For serving

  • Pickled ginger
  • Soy sauce

Preparation

  1. Cook sushi rice according to package directions, then mix in rice vinegar, sugar, and salt while warm and let cool

  2. Prepare vegetables by julienning carrots, cucumber, bell peppers, and avocado

  3. Place a nori sheet shiny-side down on a bamboo sushi mat

  4. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top

  5. Arrange vegetable strips horizontally in the center of the rice

  6. Roll the sushi tightly using the bamboo mat, starting from the bottom edge

  7. Slice the roll into 6-8 pieces with a sharp knife

  8. Serve with pickled ginger and soy sauce
