Vegan Raw Mango Layer Cake

Ingredients

Bottom layer

  • 100g almonds
  • 100g hazelnuts
  • 50g walnuts
  • 30g oats
  • 10g chia seeds
  • 20 small dates
  • 1 tsp cinnamon
  • 3 tbsp maple syrup
  • a pinch of salt

Mid layer

  • 1 banana
  • 100g frozen mango
  • 200g soaked cashews
  • 3 tbsp maple syrup
  • juice from 2/3 lime
  • 1/2 tsp vanilla powder
  • 5 tbsp full fat coconut milk

Top layer

  • 300g frozen mango
  • 1/3 cup apple juice
  • 1 tbsp maple syrup

Preparation

  1. Soak the cashews for the mid layer in water for several hours or overnight.

  2. Mix all bottom layer ingredients in a food processor and layer in a baking tin covered with parchment paper.

  3. Press flat using a spoon.

  4. Blend the mid layer ingredients until smooth and spread evenly over the bottom layer.

  5. Blend the top layer ingredients until smooth and spread over the mid layer.

  6. Place in the freezer for at least 4 hours.

  7. Let chill at room temperature for at least 20 minutes before serving.
