Vegan Seitan Stir Fry with Noodles and Pak Choi
Ingredients
- Beef style seitan
- Carrot
- Chilli
- Onion
- Garlic
- Sugar snap peas
- Baby corn
- Black bean sauce (ready-made)
- Spinach noodles
- Coriander
- Black sesame seeds
- Spring onion
- Pak choi
- Hoisin sauce
- Vegetable spring rolls (store-bought)
Preparation
Prepare the seitan if not already made, then stir-fry it with carrot, chilli, onion, garlic, sugar snap peas, and baby corn.
Add the ready-made black bean sauce and cook until the mixture is heated through and well combined.
Cook the spinach noodles according to package instructions.
Chargrill the pak choi until tender and drizzle with hoisin sauce.
Assemble the dish by topping with coriander, black sesame seeds, and spring onion, and serve with vegetable spring rolls.
