Vegan Spaghetti and Meatballs Meal

Ingredients

  • Linda McCartney meatballs
  • Organic whole wheat spaghetti
  • Chopped tomatoes
  • Herbs
  • Onion
  • Garlic
  • Wholemeal sourdough bread
  • Avocado
  • Chilli flakes

Preparation

  1. Boil spaghetti according to package instructions until al dente

  2. In a pan, fry onion and garlic until softened

  3. Add chopped tomatoes and herbs to the pan, simmer to make a simple sauce

  4. Heat Linda McCartney meatballs in the sauce until warmed through

  5. Toast wholemeal sourdough bread

  6. Mash avocado with chilli flakes and spread on the toasted bread

  7. Serve spaghetti with meatballs and sauce, accompanied by avocado toast
