Vegan Spelt Flour Chocolate Chunk Cookies
Ingredients
- 150 grams of vegan butter
- 1 cup of brown sugar (I used monk fruit sweetener)
- 1 egg replacer (I used Orgran egg replacer)
- 1 teaspoon of vanilla extract
- 1 1/2 cups of spelt flour sifted
- 1/2 teaspoon of baking powder
- 200 grams of dark chocolate cut into chunks
Preparation
Beat the butter and the sugar until creamy then add the egg replacer and combine.
Add the flour and dark chocolate and fold.
Place the dough pieces on a tray with parchment paper. Do not overcrowd the tray; leave room for the cookies to expand.
Place cookies in a preheated oven at 180 and cook for 12 minutes.
