Vegan Stuffed Potato Skins Dish
Ingredients
- 3 medium-sized potatoes
- 1/2 tbsp oil
- 1 small/medium onion
- 2 cloves garlic
- 1 1/2 cups corn
- 1 1/2 cups black beans or kidney beans
- 1/3 cup vegan sour cream
- 2 tbsp nutritional yeast flakes (optional)
- 6-8 tbsp vegan cheese
- 4 scallions
Spice mixture
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- sea salt to taste
- black pepper to taste
- hot sauce to taste
Preparation
Preheat oven to 200°C
Bake potatoes until tender, about 45-60 minutes
Cut potatoes in half lengthwise and scoop out the flesh, leaving a thin layer in the skins
In a skillet, heat oil over medium heat and sauté onion and garlic until softened
Add corn, black beans or kidney beans, scooped potato flesh, spice mixture, and vegan sour cream; mix well and cook for 5-10 minutes
Stuff the mixture back into the potato skins
Top with vegan cheese and bake for 10-15 minutes until cheese is melted and skins are crispy
Garnish with chopped scallions and serve
