Vegan Stuffed Potato Skins Dish

Ingredients

  • 3 medium-sized potatoes
  • 1/2 tbsp oil
  • 1 small/medium onion
  • 2 cloves garlic
  • 1 1/2 cups corn
  • 1 1/2 cups black beans or kidney beans
  • 1/3 cup vegan sour cream
  • 2 tbsp nutritional yeast flakes (optional)
  • 6-8 tbsp vegan cheese
  • 4 scallions

Spice mixture

  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • sea salt to taste
  • black pepper to taste
  • hot sauce to taste

Preparation

  1. Preheat oven to 200°C

  2. Bake potatoes until tender, about 45-60 minutes

  3. Cut potatoes in half lengthwise and scoop out the flesh, leaving a thin layer in the skins

  4. In a skillet, heat oil over medium heat and sauté onion and garlic until softened

  5. Add corn, black beans or kidney beans, scooped potato flesh, spice mixture, and vegan sour cream; mix well and cook for 5-10 minutes

  6. Stuff the mixture back into the potato skins

  7. Top with vegan cheese and bake for 10-15 minutes until cheese is melted and skins are crispy

  8. Garnish with chopped scallions and serve
