Vegetarian Koftas with Crispy Outer Layer

Ingredients

  • Carrots - 2 medium size (peeled and grated)
  • Spinach - 1 cup (chopped finely)
  • Cauliflower - 1/2 cup grated
  • Red chilli powder (Kashmiri) - 1 tsp
  • Black pepper powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Green chillies - 1/2 chopped fresh
  • Garam masala - 1/2 tsp @monsflavors Spice Blend
  • Salt according to your taste
  • Coriander leaves - 1/4 cup
  • Nuts of your choice - 1/3 cup (almonds and cashewnuts coarsely grounded)
  • Chickpea flour - 1/2 cup (for binding)
  • Water to bind the mixture (approximately 2 tbsp)
  • Oil for frying

Preparation

  1. Wash and grate the vegetables according to your instructions. Squeeze excess water from grated carrots and set aside the water to use for binding.

  2. In a bowl, combine the grated vegetable mixture with all the mentioned ingredients above.

  3. Add chickpea flour and any juices from the vegetables, or water if needed, to create a medium-soft mixture. Ensure the mixture isn't too hard or too soft.

  4. Mix thoroughly and shape the mixture into small to medium-sized balls.

  5. Heat oil for deep frying in a pan. Fry the koftas on medium heat until they are golden brown, making sure they cook evenly.

  6. Serve the koftas with your favorite chutney. Tamarind Chutney and Yogurt are recommended.
