Vegetarian Koftas with Crispy Outer Layer
Ingredients
- Carrots - 2 medium size (peeled and grated)
- Spinach - 1 cup (chopped finely)
- Cauliflower - 1/2 cup grated
- Red chilli powder (Kashmiri) - 1 tsp
- Black pepper powder - 1/4 tsp
- Coriander powder - 1/2 tsp
- Green chillies - 1/2 chopped fresh
- Garam masala - 1/2 tsp @monsflavors Spice Blend
- Salt according to your taste
- Coriander leaves - 1/4 cup
- Nuts of your choice - 1/3 cup (almonds and cashewnuts coarsely grounded)
- Chickpea flour - 1/2 cup (for binding)
- Water to bind the mixture (approximately 2 tbsp)
- Oil for frying
Preparation
Wash and grate the vegetables according to your instructions. Squeeze excess water from grated carrots and set aside the water to use for binding.
In a bowl, combine the grated vegetable mixture with all the mentioned ingredients above.
Add chickpea flour and any juices from the vegetables, or water if needed, to create a medium-soft mixture. Ensure the mixture isn't too hard or too soft.
Mix thoroughly and shape the mixture into small to medium-sized balls.
Heat oil for deep frying in a pan. Fry the koftas on medium heat until they are golden brown, making sure they cook evenly.
Serve the koftas with your favorite chutney. Tamarind Chutney and Yogurt are recommended.
