Veggie Gumbo

Ingredients

  • 2 cups brown rice
  • 3 tbs olive oil
  • 6 cloves of garlic
  • 1 1/2 cup of chopped white onion
  • 1 1/2 cup of chopped green bell peppers
  • 2/3 cup of chopped orange bell pepper
  • 1 cup of chopped celery
  • 2 chopped jalapeño pepper
  • 1 cup of vine ripe tomatoes
  • 2 cup of okra
  • 2 cup of vegetable broth
  • 3 bay leaves
  • 1 tsp of thyme
  • 1 tsp of Himalayan salt
  • 1/2 tsp of black pepper
  • 1/2 tsp of oregano
  • 3/4 tsp of paprika
  • 1/8 tsp of cayenne pepper
  • pinch of pink salt

Preparation

  1. Cook rice and set aside

  2. Heat 3 tablespoons of olive oil on skillet over medium heat

  3. Add garlic and chopped white onion and simmer for about five minutes

  4. Add green bell peppers, orange bell peppers, celery, and jalapeno and simmer for another five minutes

  5. Add tomatoes and okra and simmer for another five minutes

  6. Add vegetable broth, bay leaves, thyme, and the rest of the seasonings and stir well

  7. Allow to simmer for 20 minutes

  8. Serve with desired amount of rice and enjoy
