Veggie Stir Fry with Garlic and Lime Sauce
Ingredients
- red bell pepper
- carrot
- broccoli
- sugar snap peas
- baby corn
- noodles
- strips of vegan burger
- fresh lime
- coriander
- basil
- roasted sesame seeds
Sauce
- 1/4 cup tamari or soy sauce
- 1/4 cup brown sugar
- 5 tbsp lime juice
- 1/2 cup water
- 3 cloves garlic, minced
- 1 tbsp grated ginger root
- 1 tbsp sesame oil
- Cornflour slurry (2 tbsp cornflour + 2 tbsp cold water, mixed separately then added to sauce)
Preparation
Prepare all vegetables and protein by chopping them into bite-sized pieces
Make the garlic and lime sauce by mixing all sauce ingredients together in a bowl
Heat a wok or large skillet over high heat and add oil
Stir-fry the protein until cooked through
Add the harder vegetables like carrot and broccoli and cook for a few minutes
Add the softer vegetables like sugar snap peas and bell pepper and continue stir-frying until tender-crisp
Pour in the sauce mixture and stir well
Cook until the sauce thickens, then reduce heat and ensure all ingredients are well coated
Remove from heat and top with fresh lime, coriander, basil, and roasted sesame seeds before serving
Tips
You can substitute the vegan burger with other proteins like tofu, tempeh, or vegan chicken
This dish is versatile and works well with any leftover vegetables from the fridge
Serve with rice or additional noodles for a heartier meal
