Warm Vegan Goulash Soup

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 4 potatoes
  • 230 g vegan meat (used pulled from @halsanskok)
  • 1 red pepper
  • 1 chili
  • 500 g crushed tomatoes
  • 8 dl water
  • 1 dl red wine
  • 2 veggie cubes
  • 1 tsp cayenne pepper
  • 1 tsp paprika powder
  • Salt and pepper

Preparation

  1. In a big pot, fry chopped onion, garlic, and potatoes.

  2. Add the meat, chili, and red pepper and stir for a few minutes.

  3. Add the remaining ingredients, including liquids and spices.

  4. Cover with a lid and boil on medium heat for 50 minutes or until potatoes are cooked through.

Tips

  1. Enjoy with a piece of bread and a dollop of oat fraiche on top.
