Warm Vegan Goulash Soup
Ingredients
- 1 onion
- 2 cloves of garlic
- 4 potatoes
- 230 g vegan meat (used pulled from @halsanskok)
- 1 red pepper
- 1 chili
- 500 g crushed tomatoes
- 8 dl water
- 1 dl red wine
- 2 veggie cubes
- 1 tsp cayenne pepper
- 1 tsp paprika powder
- Salt and pepper
Preparation
In a big pot, fry chopped onion, garlic, and potatoes.
Add the meat, chili, and red pepper and stir for a few minutes.
Add the remaining ingredients, including liquids and spices.
Cover with a lid and boil on medium heat for 50 minutes or until potatoes are cooked through.
Tips
Enjoy with a piece of bread and a dollop of oat fraiche on top.
