White Bean Avocado and Sweet Potato Hummus Dips
Ingredients
- 1 ripe avocado
- 1 can of cannellini beans
- handful of spinach
- 2 tablespoons cilantro
- 2 tablespoons fresh lime juice
- 2 garlic cloves
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 1/2 sweet potato
- 1 can of chickpeas
- 1/4 cup extra virgin olive oil
- 1 garlic clove
- 1/2 teaspoon salt
Dip components

- 1/2 sweet potato (for Sweet Potato Hummus)
- 1 can of chickpeas (for Sweet Potato Hummus)
- 1/4 cup extra virgin olive oil (for Sweet Potato Hummus)
- 1 garlic clove (for Sweet Potato Hummus)
- 1/2 teaspoon salt (for Sweet Potato Hummus)
Preparation
Warning: These dips are very addicting.
For Sweet Potato Hummus: Cube the sweet potato and bake for 40 minutes at 350°F.
Mince the garlic clove for Sweet Potato Hummus.
For both dips: Use a food processor to blend all ingredients together until smooth.
