White Bean Avocado and Sweet Potato Hummus Dips

Ingredients

  • 1 ripe avocado
  • 1 can of cannellini beans
  • handful of spinach
  • 2 tablespoons cilantro
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1/2 sweet potato
  • 1 can of chickpeas
  • 1/4 cup extra virgin olive oil
  • 1 garlic clove
  • 1/2 teaspoon salt

Dip components

  • 1 ripe avocado (for White Bean Avocado Dip)

  • 2 tablespoons cilantro (for White Bean Avocado Dip)
  • 2 tablespoons fresh lime juice (for White Bean Avocado Dip)
  • 1/4 teaspoon salt (for White Bean Avocado Dip)
  • 2 tablespoons olive oil (for White Bean Avocado Dip)
  • 1 can of cannellini beans (for White Bean Avocado Dip)
  • 1/2 sweet potato (for Sweet Potato Hummus)
  • 1 can of chickpeas (for Sweet Potato Hummus)
  • 1/4 cup extra virgin olive oil (for Sweet Potato Hummus)
  • 1 garlic clove (for Sweet Potato Hummus)
  • 1/2 teaspoon salt (for Sweet Potato Hummus)

Preparation

  1. Warning: These dips are very addicting.

  2. For Sweet Potato Hummus: Cube the sweet potato and bake for 40 minutes at 350°F.

  3. Mince the garlic clove for Sweet Potato Hummus.

  4. For both dips: Use a food processor to blend all ingredients together until smooth.
