Wholesome Dried Fruit Bars

Ingredients

  • 200g oats
  • 150g dried figs
  • 100g pumpkin seeds
  • 100g dried apricots
  • 100g sultanas
  • 50g prunes
  • 50g dates
  • 3 tbsp agave syrup

Preparation

  1. In a food processor, pulse oats and pumpkin seeds until the pumpkin seeds are in small pieces.

  2. Add the dried fruit to the food processor, cutting any larger fruits in half. Pulse again until the fruit pieces are small.

  3. Pour in the agave syrup and pulse once more. The mixture should start to clump together.

  4. Take a small piece of the mixture and squeeze it with your hand. If it sticks together, you're ready to proceed. If not, add a little more agave syrup.

  5. Transfer the mixture into a small, lined baking dish (approximately 28x18cm). Press it firmly and evenly into the tin, using the side of a glass to roll the top flat.

  6. Once firmly packed, remove the mixture from the tray and cut into bars. Alternatively, you can roll the mixture into balls.

  7. Enjoy your wholesome dried fruit bars!
