Afelia's Quorn Shakshuka


  • oil
  • 1/2 an onion
  • salt (to taste)
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 150g Quorn mince (meat free mince)
  • 3 frozen spinach blocks defrosted in the microwave (mine are fairly large use more if your spinach blocks are smaller)
  • passata sauce (to taste)
  • 3 eggs (you can always add more if you want)
  • sour cream (optional)
  • grated cheese (to taste)


  1. Start by frying 1/2 an onion in some oil with salt (to your taste)

  2. Add 1/2 tsp coriander powder and 1/2 tsp cumin powder and fry

  3. Add 150g of Quorn Mince straight from frozen and cook through over a high flame

  4. Add 3 defrosted spinach blocks

  5. Add passata sauce to your liking; I don't enjoy too much tomato sauce so didn't add a huge amount, add as much as you like

  6. Mix the ingredients and let spinach and Quorn cook through. Spread ingredients evenly in the pan

  7. Crack 3 eggs over the top

  8. Dollop sour cream over the top (this is optional but tastes extremely good)

  9. Add a generous handful of grated cheese over the top. Cook covered for a few minutes on the stove top and finish off under the grill to melt cheese and sour cream
