Afelia's Quorn Shakshuka
Ingredients
- oil
- 1/2 an onion
- salt (to taste)
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 150g Quorn mince (meat free mince)
- 3 frozen spinach blocks defrosted in the microwave (mine are fairly large use more if your spinach blocks are smaller)
- passata sauce (to taste)
- 3 eggs (you can always add more if you want)
- sour cream (optional)
- grated cheese (to taste)
Preparation
Start by frying 1/2 an onion in some oil with salt (to your taste)
Add 1/2 tsp coriander powder and 1/2 tsp cumin powder and fry
Add 150g of Quorn Mince straight from frozen and cook through over a high flame
Add 3 defrosted spinach blocks
Add passata sauce to your liking; I don't enjoy too much tomato sauce so didn't add a huge amount, add as much as you like
Mix the ingredients and let spinach and Quorn cook through. Spread ingredients evenly in the pan
Crack 3 eggs over the top
Dollop sour cream over the top (this is optional but tastes extremely good)
Add a generous handful of grated cheese over the top. Cook covered for a few minutes on the stove top and finish off under the grill to melt cheese and sour cream
