Almond Cookies with a Citrus Twist

Ingredients

  • 1 cup ground almonds
  • 1/2 cup rice or tapioca flour
  • 1 egg
  • 1 tbsp baking powder
  • sweetener to taste (stevia powder used)
  • orange or lemon zest (optional)

Preparation

  1. Mix the flours well and add the baking powder.

  2. Add the egg, sweetener, and zest (if using) and mix very well until a dough forms.

  3. Clean the counter, sprinkle some flour, and roll out the dough to a thickness of 2cm using a rolling pin.

  4. Cut the dough into shapes and transfer the cookies to a baking sheet.

  5. Bake for 8 minutes at 180C.

Tips

  1. Adding orange or lemon zest enhances the flavor, making the cookies even more delicious.
