Almond Cookies with a Citrus Twist
Ingredients
- 1 cup ground almonds
- 1/2 cup rice or tapioca flour
- 1 egg
- 1 tbsp baking powder
- sweetener to taste (stevia powder used)
- orange or lemon zest (optional)
Preparation
Mix the flours well and add the baking powder.
Add the egg, sweetener, and zest (if using) and mix very well until a dough forms.
Clean the counter, sprinkle some flour, and roll out the dough to a thickness of 2cm using a rolling pin.
Cut the dough into shapes and transfer the cookies to a baking sheet.
Bake for 8 minutes at 180C.
Tips
Adding orange or lemon zest enhances the flavor, making the cookies even more delicious.
