Aubergine & Chickpea Harissa Salad.

Ingredients

  • Aubergine
  • chickpeas
  • red onion
  • cloves of garlic
  • baby tomatoes
  • olive oil

Preparation

  1. Baked for 30 minutes

  2. I was going to eat it hot but let it cool while I made a salad. Rocket leaves, avocado ?, fresh basil & cucumber

  3. Mixed together with lemon

  4. Juice, balsamic vinegar & drizzled with mayo
