Baba Ghanouj
Ingredients
- 1 eggplant.
- 1 garlic clove.
- 1 lemon.
- 3 tbsp tahini.
- sea salt and black pepper
- optional garnish with mint/ pomegranate seeds/ sumac .
Preparation
Simply cut the eggplant in 1/2 and bake for about 45 minute at 350 degrees ( until the eggplant is all soft and cooked really through)
Cool off for about 10’minutes, scoop out the eggplant and add mashed garlic clove, one lemon juice and tahini , season with salt and black pepper and with a fork mix really well until all ingredients are well combined
Serve with pita bread or vegetables sticks
