Baba Ghanouj

Ingredients

  • 1 eggplant.
  • 1 garlic clove.
  • 1 lemon.
  • 3 tbsp tahini.
  • sea salt and black pepper
  • optional garnish with mint/ pomegranate seeds/ sumac .

Preparation

  1. Simply cut the eggplant in 1/2 and bake for about 45 minute at 350 degrees ( until the eggplant is all soft and cooked really through)

  2. Cool off for about 10’minutes, scoop out the eggplant and add mashed garlic clove, one lemon juice and tahini , season with salt and black pepper and with a fork mix really well until all ingredients are well combined

  3. Serve with pita bread or vegetables sticks
