Baked Aloo Tikki - Indian Spiced Potato Croquettes
Ingredients
- 1 1/2 lbs baby starchy potatoes (peeled if desired)
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 2 garlic cloves, minced
- 2 inches grated ginger
- 2 tbsp corn starch
- 1/2 cup each of defrosted peas & corn
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/4 tsp Garam masala
- 1/4 tsp cumin powder
- 1/4 tsp coriander powder
- Cayenne powder (to taste)
- Salt and pepper (to taste)
- For Breading: 3 tbsp tapioca flour, whole wheat bread crumbs as needed
Preparation
Steam the baby potatoes on the stovetop in a steamer until fork tender (around 20-30 minutes). Afterward, rice or mash them to achieve a smooth consistency. If using a ricer, it may also peel the potatoes. Allow them to cool.
On the stovetop, drizzle a pan with neutral oil over medium heat. When hot, add cumin and mustard seeds. When fragrant and the seeds start to pop, add in grated ginger and minced garlic. Heat for 30 seconds, being careful not to burn the garlic.
Add the spices and herbs from the stovetop to the potato mash. Also, add potato starch, defrosted peas, corn, and remaining seasonings. Mix until the ingredients are evenly distributed. The mash should feel smooth. If it's too wet, add a bit of starch.
Form the mash into 1/4 cup patties, separating them using wax or parchment paper. Place them in the fridge to firm up for at least 1/2 hour or until the next day.
For the breading: Mix tapioca powder with water until it forms a thin batter. Spread out breadcrumbs on a plate. Dip each patty into the batter, then dredge it in bread crumbs. Repeat the process, then place the coated patties on parchment paper.
Mist the patties with oil. Pre-cook the patties on a non-stick pan over medium heat for 5 minutes to toast the breading (do this in batches if needed).
Preheat an air fryer to 400°F (200°C). Then, bake the patties in the air fryer until the crust becomes golden and firm, about 10 minutes, flipping them halfway through. Alternatively, you can bake them in a preheated oven at 400°F until golden.
