Baked Winter Vegetables
Ingredients
- 300 gr. pumpkin
- 1 cup of pre-cooked chickpeas
- 1 fennel
- salt and pepper to taste
- 4 carrots
- a handful of pearl onions
- 2 bay leaves
- 2-3 tablespoons of extra virgin olive oil
- 1 tablespoon of tomato puree
- 1 cup of vegetable broth
Preparation
Cut the vegetables into small pieces and put them in a pan where you will add salt, pepper,
Extra virgin olive oil and tomato sauce
Stir, also add the broth and bay leaves and bake at
F for 30 minutes or until you see that the vegetables are well cooked
