Banana & Almond Loaf

Ingredients

  • 1 cup @freshlifefood almond meal
  • 1 cup oat flour (i just whizz up @harrawaysnz rolled oats in the blender for a few seconds!)
  • 1 tablespoon coconut flour
  • 1/4 cup ground flaxseed meal
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 tsp baking powder + baking soda

Preparation

  1. Add your dry ingredients in to the mixing bowl until well combined. Pour 1/4 almond milk (@pureharvest is the best!) and mix again

  2. Pour the mixture in to a parchment-lined loaf tin. Drizzle with almond butter (the runny @picspeanutbutter is the best ?), and top with cacao nibs + slivered almonds

  3. Bake at 180C for around 40 minutes until cooked through

  4. And enjoy
