Banana and Almond Loaf

Ingredients

  • 2 large very ripe bananas
  • 2 eggs
  • 1/4 cup almond milk
  • 1 cup almond meal
  • 1 cup oat flour
  • 1 tablespoon coconut flour
  • 1/4 cup ground flaxseed meal
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Almond butter for drizzling
  • Cacao nibs
  • Slivered almonds

Preparation

  1. Mash the bananas in a mixing bowl.

  2. Whisk the eggs and mix them into the banana.

  3. In a separate bowl, combine the dry ingredients.

  4. Add the dry ingredients to the banana mixture and mix until well combined.

  5. Pour in the almond milk and mix again.

  6. Pour the mixture into a parchment-lined loaf tin.

  7. Drizzle with almond butter and top with cacao nibs and slivered almonds.

  8. Bake at 180°C for around 40 minutes until cooked through.
