Bbq Lentil Tacos

Ingredients

  • 5 cups of homemade no sodium vegetable broth
  • @organicville Tangy BBQ Sauce
  • lentils
  • baby lettuce greens
  • bunch of chives
  • homemade sour cream
  • roasted garlic
  • tomato
  • green chilies
  • corn tortillas

Preparation

  1. I took 1 cup of green lentils (rinsed) and cooked them in 2.5 cups of homemade no sodium vegetable broth for about 20 mins or until they were done. I drained what little liquid was in them out and then put them back in the pot they cooked in along with half a bottle of @organicville Tangy BBQ Sauce. Just let that warm through

  2. While the lentils were cooking I raided our indoor garden for baby lettuce greens and our outdoor garden for a whole bunch of chives. I chopped the chives up and stirred them into a bowl of our homemade sour cream ( recipe linked below ) along with some chopped roasted garlic. I chopped up a tomato, opened a can of corn and drained it, opened a can of chopped green chilies, toasted up some corn tortillas and it was time to eat. Layer as you like it and its chow time
