Beet Hummus


  • 1 small beet, chopped (no need to peel or roast)
  • 1 16 oz. can chickpeas, drained and rinsed
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon tahini
  • 1/2 lemon, juiced
  • 1/4 teaspoon salt (or more to taste)
  • 1/4 teaspoon pepper (or more to taste)


  1. Place all ingredients in high speed blender and purée until smooth and creamy.

  2. Add more oil or water to thin out if needed.

  3. Taste and adjust seasonings.

  4. You can add one clove of garlic if desired.

  5. Garnish with parsley and sesame seeds.

  6. Serve with chips, crackers or veggies
