Easy Vegan Beet Hummus Dip
Ingredients
- 1 small beet, chopped
- 1 16 oz. can chickpeas, drained and rinsed
- 1/4 cup extra virgin olive oil
- 1 tablespoon tahini
- 1/2 lemon, juiced
- 1/4 teaspoon salt (or more to taste)
- 1/4 teaspoon pepper (or more to taste)
Optional
- 1 clove garlic
Preparation
Place all ingredients in a high-speed blender and purée until smooth and creamy.
Add more oil or water to thin out if needed.
Taste and adjust seasonings.
You can add one clove of garlic if desired.
Garnish with parsley and sesame seeds.
Serve with chips, crackers, or veggies.
