Berry Mudslide Weetbix Brownies

Ingredients

  • 60g Weetbix (crushed)
  • 50g Almond Meal
  • 1 tbs Cacao Powder
  • 1 tbs Coconut Sugar
  • 100 ml Almond Milk (unsweetened, e.g., So Good)
  • 1 tbs Tahini (or any nut butter)
  • 1 tsp salt (pink Himalayan)
  • 1 tsp baking powder and baking soda
  • 40g Dark Chocolate Chunks (e.g., Lindt 85%)
  • Frozen Raspberries

Preparation

  1. Preheat oven to 180°C

  2. In a bowl combine Weetbix crumbs, almond meal, cacao, salt and baking powder and soda

  3. Add in milk, tahini, coconut sugar and stir until combined

  4. Fold through chocolate chunks and raspberries

  5. Pour mixture into lined baking tray

  6. Bake for 20-25 minutes or until cooked through
