Here's the lunch box sized version of the cheeseless khachapuri/bialy-like bread bake I mentioned in yesterday's post. Using the same Khachapuri dough from Orly @orlyhermesh's. The filling is a mixture of scallion, za'atar seasoning, olive oil and salt. If you can't find za'atar seasoning in your local grocery store, you can mix your own. I'm sure there are people much more knowledgeable about the cuisine who can wax poetic about this magic spice blend and give guidance. I default to their expertises. Here's the one I use to make about 1/2 cup: 3 tbs thyme, 1 tbs toasted sesame seeds, 1 tbs sumac, 1/2 tsp oregano, and 1/4 tsp salt
