Big Bowl of Organic Vegetable Soup

Ingredients

  • 5 Celery ribs
  • 4 Carrots
  • 1 medium Onion
  • 2 cloves of Garlic
  • 1 small Zucchini
  • 2 Collard Leaves chopped fine
  • 1 cup of Broccoli and Cauliflower
  • Can of Fire Roasted Tomatoes
  • 1 package of Garbanzo Beans
  • 4 Cups low sodium Vegetable Broth
  • Fresh Thyme
  • Dried Dill
  • 2 Bay Leaves
  • Salt and Pepper

Preparation

  1. Chop the celery, carrots, onion, garlic, zucchini, collard leaves, broccoli, and cauliflower

  2. In a large pot, sauté the onion and garlic until fragrant

  3. Add the chopped vegetables, fire-roasted tomatoes, garbanzo beans, vegetable broth, thyme, dill, bay leaves, salt, and pepper

  4. Bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes or until vegetables are tender

  5. Remove the bay leaves before serving
