Big Bowl of Organic Vegetable Soup
Ingredients
- 5 Celery ribs
- 4 Carrots
- 1 medium Onion
- 2 cloves of Garlic
- 1 small Zucchini
- 2 Collard Leaves chopped fine
- 1 cup of Broccoli and Cauliflower
- Can of Fire Roasted Tomatoes
- 1 package of Garbanzo Beans
- 4 Cups low sodium Vegetable Broth
- Fresh Thyme
- Dried Dill
- 2 Bay Leaves
- Salt and Pepper
Preparation
Chop the celery, carrots, onion, garlic, zucchini, collard leaves, broccoli, and cauliflower
In a large pot, sauté the onion and garlic until fragrant
Add the chopped vegetables, fire-roasted tomatoes, garbanzo beans, vegetable broth, thyme, dill, bay leaves, salt, and pepper
Bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes or until vegetables are tender
Remove the bay leaves before serving
