Bombay Masala Tofu Scramble with Fresh Avocado

Ingredients

  • half yellow bell pepper diced >1/4 white onion diced >1/4 jalapeño diced >1 garlic clove minced
  • 1/3 tofu block
  • 1-2 tsp kosher salt
  • 2 tsp black pepper >1 tsp turmeric
  • 1 tbsp bombay masala
  • 1 tsp paprika >>marinated onions >1/4 white onion sliced julienne >dash of salt >half lime juiced
  • cilantro .

Preparation

  1. Heat up a sauté pan at a medium high heat

  2. Add about 1 tbsp cooking oil and cook the bell peppers until slightly browned

  3. Add the onions and cook til translucent

  4. Throw the fresh garlic and jalapeño in

  5. Cook until you can smell the jalapeño

  6. Crumble in the tofu and sauté for a few mins

  7. Add the salt and rest of the seasoning with a little extra added oil

  8. Taste and adjust seasonings from there

  9. I have a light salt hand so you’ll probably need more salt lol

  10. Sauté until fragrant and garnish with fresh cilantro

  11. The marinated onions is easy

  12. Jus slice and mix it together and let it sit for like 10 mins

  13. The lime juice eats away at the raw onion flavor and leaves it’s nice n crisp

  14. Cut open an avocado and film it

  15. I like my spice so i added a little fresh crushed red pepper
