Bowl with Squash, Artichokes, Chestnut Mushrooms and Rosemary

Ingredients

  • 3 cloves garlic, chopped
  • handful of finely chopped butternut squash
  • 4 chestnut mushrooms, quartered
  • 1 packet of merchant gourmet cooked spelt
  • 2 sprigs rosemary
  • handful of artichokes in oil

Preparation

  1. Chuck in a good glug of olive oil and knob of butter. Add squash, cook on medium heat until softening, season then add garlic and mushrooms, stir and fry until all the veggies are cooked

  2. Add spelt grains, rosemary and a splash of water. Check seasoning then add the artichokes

  3. Cook for 8/10 mins on medium heat, then serve with masses of grated aged parmaesan
