Buckwheat Avocado Coconut Smoothie Bowl
Ingredients
- 1/4 cup buckwheat groats
- 1 small avocado
- 2 large spoonfuls coconut yoghurt
- 1 fig
- 1 to 2 tbsp cacao powder
- 1 date
- 1 tsp almond butter
- A good glug plant-based milk
Toppings
- More coconut yoghurt
- Chocolate drizzle
- Mini raw vegan brownie bites
- More figs
- Cacao nibs
- Almond butter
- Chocolate covered almonds
- A few crunchy buckwheat groats
Preparation
Soak the buckwheat groats in slightly cooled boiled water for 20 minutes, then rinse and drain.
Place the buckwheat groats in a blender with the avocado, coconut yoghurt, fig, cacao powder, date, almond butter, and plant-based milk.
Blend until smooth.
Spoon the mixture into a bowl.
Add the toppings including more coconut yoghurt, chocolate drizzle, mini raw vegan brownie bites, more figs, cacao nibs, almond butter, chocolate covered almonds, and crunchy buckwheat groats.
