Frozen Avocado and Greens Smoothie Bowl

Ingredients

  • 1 cup unsweetened canned coconut milk (plain, no guar gum)
  • 1/4 avocado, frozen
  • 1/4 cup organic frozen wild blueberries
  • 1/2 cup frozen greens (e.g., spinach)
  • 1 tbsp coconut butter
  • 1/2 tbsp blue spirulina
  • 1 tbsp chia seeds
  • 1 scoop plain organic pumpkin seed powder (optional)

Toppings

  • cacao nibs
  • shredded coconut
  • cashew butter

Preparation

  1. Blend all ingredients except toppings until smooth

  2. Pour the blended mixture into a bowl

  3. Add the toppings and serve
