Carrot Apple No-Bake Vegan Cake
Ingredients
Base
- 8 dates
- 1/2 cup shredded apple
- 1 cup shredded carrots
- 1 tsp cinnamon
- pinch of sea salt
- 1 cup coconut milk (the thick part)
- 2 cups oat flour or quick oats
Filling
- 1 cup overnight cashews
- 1 cup coconut cream
- 3-4 tablespoons pure maple syrup
- 1/4 teaspoon turmeric
- 1 teaspoon agar agar
Preparation
Soak cashews overnight before preparing the filling
Blend all base ingredients except oats in a blender.
Add oats to the base mixture and mix in a bowl.
Press the base mixture firmly into a cake pan or mold
Blend all filling ingredients until smooth and creamy.
Pour the filling over the prepared base.
Place in the refrigerator or freezer until set.
