Carrot Apple No-Bake Vegan Cake

Ingredients

Base

  • 8 dates
  • 1/2 cup shredded apple
  • 1 cup shredded carrots
  • 1 tsp cinnamon
  • pinch of sea salt
  • 1 cup coconut milk (the thick part)
  • 2 cups oat flour or quick oats

Filling

  • 1 cup overnight cashews
  • 1 cup coconut cream
  • 3-4 tablespoons pure maple syrup
  • 1/4 teaspoon turmeric
  • 1 teaspoon agar agar

Preparation

  1. Soak cashews overnight before preparing the filling

  2. Blend all base ingredients except oats in a blender.

  3. Add oats to the base mixture and mix in a bowl.

  4. Press the base mixture firmly into a cake pan or mold

  5. Blend all filling ingredients until smooth and creamy.

  6. Pour the filling over the prepared base.

  7. Place in the refrigerator or freezer until set.
